Planning a Tailgate Party

It's that time of year - time for football games and tailgate parties. Tailgating has become a national obsession. It is a great way to socialize and meet new friends as you prepare for the big game. Men who never cook at home create and serve a special dish that becomes their signature fare. Women raid their cookbooks and recipe boxes looking for scrumptious dishes to share.

The name "tailgate party" is named for the tailgate of a pickup truck, which is the traditional vehicle used for the party. If you or a friend don't own a pickup, don't despair. An SUV or a van will work just as well, since you won't be cooking in the vehicle. You will, however, need to transport grills or stoves, coolers, tables and chairs, so you need a good-sized vehicle. Today, many tailgaters bring tables, chairs, and canopies to expand the available space and make cooking easier.

If you have never tailgated before, here are a few things to consider. First, invite a group of friends to join you. Then, decide who will provide the entree, the side dishes, and the dessert. Because the weather is often cool, hot food is usually served rather than sandwiches. Entrees such as hamburgers or steaks can be cooked over a grill. Chili and hearty soups can be prepared on a propane-burning camp stove. Avoid serving alcohol, however, unless you are willing to risk arrest.

Plan to begin cooking about three hours before the game begins unless you bring a main dish that only needs reheating. This will allow time for the grill to heat, for cooking, eating, cleaning up, and socializing before the game.

Take the initiative and get acquainted with the tailgaters in nearby parking spots. Offer them a taste of your food in exchange for a taste of theirs. Share recipes and ideas. Having a tailgate party is a great way to entertain your family and friends and meet new friends. Enjoy!
